A professor at Kasetsart University invented the Kaset Protein or ‘artificial meat’ to provide more choice of food for underprivileged children in rural areas who face malnutrition. The result later became popular among vegetarians. Kaset Protein is made of a cheap, year round available plant - soy bean - by using soy bean Defat flour to undergo the extrusion cooking process. Protein from Kaset Protein is guaranteed to be of similar quality to casein in cow’s milk.
