Chiang Mai Food: Kab Moo (Crispy Fried Pork Skin)
Kab Moo is a very basic and common supplement to almost every Northern Thai dish. In northern culinary tradition Kab Moo can be a part of every meal, and also a tasty snack. It is pretty easy to buy Kab Moo here in Chiang Mai, as it is sold in every local market; but if you happen to reside in other parts of the world where crispy pork skin does not exist, you may want to make it yourself. Here’s how.

Pork skin
|

Soy sauce

Directions
1. Boil the pork skin until cooked.
2. Put the boiled pork skin out in the sun until it dries.
3. Make sure to pluck all hairs from the skin.
4. Cut the skin into 3x5 inch pieces.
5. Mix the skin with salt, soy sauce, blended garlic
and pepper.
6. Put the marinated skin out in the sun until it dries.
7. Deep fry the skin until it turns yellow and crispy.
