Chiang Mai Food: Jackfruit Curry
Local favourite
Jackfruit is commonly used in South and Southeast Asian cuisines. It can be eaten unripe or ripe, and cooked or uncooked. The seeds can also be eaten cooked or baked like beans. Jackfruit is the main ingredients in several favourite dishes of India, Bangladesh, Sri Lanka, Indonesia, Cambodia, and Vietnam. In the north of Thailand, jackfruit also plays an important role in many famous dishes.

Instructions
1. Prepare the soup by boiling the pork ribs and jackfruit until they become tender.
2. Mix and blend all spices: chili, red onions, and garlic; then add some preserved fish and shrimp paste.
3. Heat the curry pot for another 10 minutes, and then add acacia, tomatoes and betel leaves.
4. The jackfruit curry is ready to be served with steamed or sticky rice.
